"Customers love the butcher's chart," he says. "They'll say, 'Show me where my filet came from' or 'Show me where my rib-eye came from.' Why do so many chefs have tattoos? We're artists. My best friend owns The Hornet's Nest (tattoo studio). It's hard not to get 'em when you get 'em for free. My tattoos all revolve around food — or skateboarding." Anna Piper 21, sauté cook, Silver Dollar Flowering garlic plant on ribs. "At the time, I was engaged to a cook and we had a mutual love for garlic. Now, I just tell people I love garlic." Piper also has six apples — Gala, Red Deli- cious, Fuji, Granny Smith, McIntosh and the Golden Apple of Discord from Greek mythology — tattooed on her thigh and, on her arm, a carton of milk with the phrase "No use cryin'."
