"Why start a haircut with all that crap on the head?" says Jerry Heston, owner of the Shelbyville Road Plaza salon that bears his name. It's one of a handful of Aveda concept salons in town that perform "com- plimentary sensory rituals," using plant-based essen- tial oils for a 15-minute head massage and shampoo treatment prior to the cut. That the massage relaxes the jaw I didn't realize was clenched and turns my tongue into a puddle is just a bonus. "It's better than going to the dentist," jokes 58-year-old Heston, who opened the salon 35 years ago after Warren Beatty's playboy character in the movie Shampoo inspired him to become a hairdresser. "I can feel the pressures in people's heads," says stylist Georgia Marrillia. "I had a client say once, 'You can change the world with head massages.' People are completely different when they get back to the chair — especially if they're new and they're not sure about you. I love doing it. It's my favorite part." — MCA BEST ITALIAN RESTAURANT Step one: Sit at the bar, where bottles of wine are always half-price.
