96 LOUISVILLE MAGAZINE 8.14 food drink THE SPREAD Chicken with a waffe ($9) is the perfect sweet-salty-savory symphony of crunchy tenders, golden Belgian waffe and a drizzle of bourbon-butter-caramel sauce. That sauce could make the primmest young lady on the most high- stakes frst date lick her plate like a starving lumberjack. The beer-cheese burger ($11) comes on a pretzel bun with two strips of bacon, slathered with beer cheese made with Bell's Two Hearted Ale. The West Sixth mac and cheese fritters ($6) are made with West Sixth Amber Ale and served with a Southwest aioli. And, oh yes, don't forget about the fried Oreos ($5), which are a popular late-night snack. Jumbo whole wings ($8) — "a labor of love," co-owner John Skelton says — are smoked for two to three hours, then fried to order and served smothered in sauce. John is particularly proud of his sauces. "Everyone has their strength, and mine is sauces," he says. The Louisville Red sauce is sweet and thick, Hilltop's version of fancy ketchup, and the spicy and mouth-tingling barbecue sauce is made with habañero-infused vodka.
