54 LOUISVILLE MAGAZINE 5.19 Dalton Gahafer CHEF, PINTS & UNION Dalton Gahafer, born and raised in Louisville, specifically plans trips around which restaurants he has researched and is eager to eat at. There was a marriage of high brow restaurant appreciation when he began working for Bourbon Barrel Foods. From there came Seviche with Chef Anthony Lamas, and under his and Chef de Cuisine Roger Romine's tutelage, he began to develop the skills to work within the high paced environment of professional kitchens. He left Seviche after he was given the chance to become Execute Chef at Pints&union, working together with owner Joe Phillips to bring our cities a safe and creative space to partake in great food and drink. Surrounded by a family that enjoys great food, I have developed a more simplistic style of cooking. I love to use basic ingredients to curate fulfilling, comforting food with a hint of elegance. Local seasonal ingredients are key to keeping food simple and delicious. A garden ripe Heirloom Tomato with a good flakey salt has always been one of my favorites. I look forward to our industry thriving on local ingredients and inspiring our guests to come back for more.
