108 LOUISVILLE MAGAZINE 5.19 BOARD BACK J-E-L-L-OH! A photo of a mint-green dessert, with nuances of a 1950s ad for a Jell-O mold, recently caught my eye on Instagram. So I drove 35 miles northeast of Louisville, past many dilapidated wooden barns, to Smithfield, where the population is just over 100 and Our Best Restaurant has been doing country cookin' for 28 years. The barn-red building has a white porch, and inside, flour sacks and other memorabilia decorate the walls. Kentucky Lime Salad is, in fact, not dessert. It's meant to be eaten before a plateful of fried chicken and mashed potatoes or country-fried beef steak and chilled pickled beets. I was a bit nervous to try this seemingly dated dish, served with a single lettuce leaf and a pack of saltines. The lime Jell-O and cottage cheese mixture is filled with crushed pineapple, miniature marshmallows and pecans. It's firm but sponge-like, and it jiggled a little as I stuck my fork into it. "Oh," I said, taking my first bite, noting the tropical notes and the crunch from pecans. "That's good." — Katie Molck
