Photo by Gail Kamenish Chef Bobby Benjamin has included a version of this salad on his menus for more than a decade, including at the Seelbach's Oakroom and La Coop on East Market Street (closed). Now, his kitchen at Butchertown Grocery uses a machine called a Pacojet to churn out ice cream made with jalapeño blue cheese from Kenny's Farmhouse. "The salad gets better as the ice cream melts and almost becomes this dressing," Benjamin says. "You really put your palate on a roller coaster." — Maya O. McKenzie
