122 LOUISVILLE MAGAZINE 8.18 THE PIN-UP Fire Greens Inside the ramen restaurant Mirin, on Frankfort Avenue, part of the counter overflows with pea shoots, little fireworks of mantis-green everywhere. This is the work of Keegan Wagner, who started experimenting with growing micro greens in November and now sells to several restaurants, including Harvest, the Village Anchor and SuperChefs. He works out of a spare bedroom in his East End home, where he grows the greens on 10-by- 20-inch trays stacked on vertical shelving units, each with its own lighting fixture. Of the dozen or so greens he grows, a popular one is a mix of broccoli, cabbage, kale and red garnet amaranth. "It adds color, isn't too spicy," Wagner says. His favorites are sunflower shoots, which are succulent and crunchy 10-day-old sunflowers. "Every week, I'll have leftovers and make a pile of sunflower shoots with goat cheese, pecans, apples and drizzled honey," he says. — Mary Chellis Nelson Photo by Gail Kamenish
