72 LOUISVILLE MAGAZINE 12.15 OVERVIEW "The Fire-in-da- hole! is not hot in that annoying B-Dubs way where it's just hot to be an asshole." "I don't think I've had a piece of white bread like this since elementary school. It's a greasy sponge. I think it's my favorite part of the whole meal. It just soaks up all the goodness." — JM On a recent afternoon, photographer Mickie Winters, art director Suki Anderson, deputy editor Mary Chellis Austin and editor Josh Moss gathered at Joella's Hot Chicken (3400 Frankfort Ave.) to see what all the chirping is about. We ordered the milder Ella's Fave in white meat, the "spicy fre" in dark meat and a couple of Fire-in-da-hole! chicken tenders. "With most chicken, it's hard to keep it this juicy." "Kale salad here versus cooked hot greens at other places. This has a more upscale feeling." — MW "I like the medium one. The hot, I can't eat it for very long. I have to let my mouth cool down before I take another bite." "Just gnaw on it." "I think the burning stopped." — SA "I'm starting to feel my forehead perspire." "How hot do you really want your chicken anyway?" — MCA
