For the frst three years she made and sold her chocolates to shops and boutiques around Louisville; and as her confections began to gain popularity and press notice, she moved into the Butchertown Market to expand her already extensive line of chocolate trufes, caramels, peanut butters and bourbon balls. As Cellar Door grew, Erika brought on Kate Hammonds Lyons as head chocolatier and Sarah Walker as retail manager, along with several other remarkable and talented women. Today, Cellar Door Chocolates still uses the original recipes Erika created in 2007. It still believes in caring frst about how the chocolate tastes and second about how it looks. Flavor combinations are carefully created. The goal is to complement the fne background notes of the chocolate — a chocolate of the highest quality — not to mask it with overwhelming favoring. Erika believes in giving back to the community that embraces her company, and Cellar Door Chocolates is proud of its community involvement. Cellar Door works closely with Actors Theatre of Louisville, Boys & Girls Haven, the American Lung Association and several other non-profts. Cellar Door also serves as an incubator for blossoming chocolatier talent and regularly ofers consulting services to up-and-coming small businesses. Additionally, Erika Chavez-Graziano recently brought another delicious venture to the Butchertown Market — Jackknife Café.
